METHODOLOGICAL DEVELOPMENT

class hour

on the topic “The relevance of my future profession”

Group: 3P1

Profession: Cook, pastry chef

Class teacher: Bulekova E.A.

2015

Explanatory note

One of the main forms of extracurricular educational work has been and remains the classroom hour.

In secondary specialized educational institutions, a class hour is a form of educational work of the curator, in which students take part in specially organized activities that contribute to the formation of their system of relations to the world around them.

Functions of the classroom: educational, orienting, guiding, formative. By implementing these functions in the classroom, we develop students’ skills in thinking and evaluating their actions and themselves, helping them develop skillful dialogue and expression, and defending their own opinions.

When preparing and conducting this event, students will search for information, analyze and evaluate, work in a team, and be responsible for the results of their group’s work, which is reflected in the Federal State Educational Standards requirements for the development of general competencies. Participation in the class will contribute to understanding the essence and social significance of your future profession.

Conducting a class hour with 3rd year students (graduates) on the topic “The relevance of my future profession” is relevant, since at this stage of training all graduates are often concerned about the right choice of place of work, and vital priorities are determined.

This event will help instill a love for the profession, the formation and development of positive attitudes for the future.

The class hour is conducted in a playful way, which makes the event dynamic and lively. It contains tasks focused mainly on the development of general and professional competencies.

This methodological development can be recommended to curators of groups of students in the profession of “Cook, Confectioner”.

Opening speech by the class teacher

Good afternoon, dear students, guests!

The skill of preparing delicious delicacies - confectionery - has been valued at all times, and the secrets of the exquisite taste of cakes, sweets and other sweets are always kept strictly secret.

A confectioner is a specialist who has the knowledge, skills of preparing confectionery products and the technology of this process.

Today in class we will talk to you about the most ancient and beautiful profession - the profession of pastry chef.

Presenter 1

History of the profession:It is difficult to reliably establish the time of the origin of the confectionery craft. Perhaps the first confectioners were the Mayan Indians, who discovered the amazing properties of chocolate, or the inhabitants of ancient India, who learned the taste of cane sugar and made sweet sticks from it.

It is known that during archaeological excavations in Egypt, “sweets” made by hand from dates were found.

In later times, in the courts of royalty and high nobility in Europe, pastry chefs were among the privileged servants.

Nowadays, the confectionery industry is experiencing a period of growth and is actively mastering new technologies and developments from related areas of cooking.

Presenter 2

A true confectioner will create creativity and pleasure around himself when decorating cakes and pastries, will excite the taste of many, many sweet tooths, and will bring joy with his unforgettable beauty of rose petals, flowers, and leaves. Flowers should be made so gracefully that you would want to pick them up and smell them.

Many confectioners today create small works of art that the most sophisticated gourmet would not resist. Who doesn’t love this special atmosphere over a cup of coffee or aromatic tea, enjoying a leisurely conversation and admiring the art of the pastry chef?

One French gourmet said: “There are five beautiful arts: painting, sculpture, poetry, music and architecture” - the main components of the art of confectionery.

Presenter 1

In his work, the confectioner uses hand tools, mechanical and electromechanical equipment. Confectionery production varies significantly in the degree of labor automation: from fully automated production (automated production lines for the production of waffles, cookies, sweets) in large confectionery shops and workshops, to non-automated production (manual labor using mechanical and electromechanical equipment when producing cakes, pastries) and etc.

Presenter 2

The pastry chef baked it for me

Delicious cookies,

I'll order from him

Birthday cake.

He will bake it for me

And decorate with cream,

I'll invite him to my place,

Let him teach the business.

I also want to be able to

Cooking sweets

I'll look at him

We need to remember everything.

I will write down all the recipes

For myself of course

I thank him

Taught successfully.

Presenter 1

The confectionery industry is an industry that produces high-calorie food products, which, as a rule, contain large amounts of sugar.

The confectionery industry includes two groups of production for the production of sugar and flour confectionery products. These groups, in turn, include a number of industries: caramel, candy, chocolate, pastille-marmalade, waffle, production of cookies, crackers, biscuits, cakes, pastries, etc., differing in technology, equipment used and final products.

The confectionery industry is one of the most dynamically developing sectors of the food industry. Over the past four years, confectionery consumption has increased from 8.5 kg to 10 kg per person per year.

Presenter 2

The profession of a pastry chef is in demand at all times. It is interesting to note that consumption and love for “sweets” practically does not depend on the state of the economy. During periods of rising income, sales of exclusive products increase, and during times of economic downturn, confectionery products are no less popular, helping to cope with depression.
